SID = Standard Instrument Departure
STAR = Standard Terminal Arrival

Both are procedures used, when assigned by ATC, to control traffic flow in and out of an airport area. The SID allows a method to transition the departing aircraft from the terminal environment to the enroute environment, and the STAR is just the opposite, providing navigation paths to transition from the enroute environment to the terminal environment.

STAR: Standard Terminal Arrival Route. This is the same as an approach plate. SID: Standard Instrument Departure. This is a little more tricky. It is used for high volume airports. A SID is used as a "pre-programed" departure route. The ATC controller doesn't need to "control" the aircraft as much, since the plane is using a pre defined route. In other words, the controller already knows what the planes intentions are, so spends less time with him. When you hear departure state "join the (your name here) transition", that is the verbal cue to follow the departure procedure.
