Making it More Realistic - FSX

How can I make my FSX flight more realistic? I collide with trees but don't get damage and bounce back in the air when I hit the ground?
I want to learn all aspects of flying a plane w/o going to a flight school, at least for now, and I was wondering if anyone had a suggestion as to what I should use to learn.
What are some of the most realistic aircraft I can fly in FSX?
