is it possible to change dnloaded activities which require extra rolling stock, to work with the locos and cars which i do have?

Yes you can use AE or Conbuilder. For this I would use Conbuilder, AE has a good chance of crashing due to the missing rolling stock.

I have renamed locos and wagons to get activities to run.
